  • 1 cup cheddar cheese, shredded
  • 1/4 cup red onion, diced
  • 6 slices bacon, cooked and crumbled
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1 tablespoon vinegar (apple cider or white)
  • Salt and pepper to taste
  • Optional: Fresh parsley, chopped

Instructions

  1. Thaw the peas: Place frozen peas in a colander and rinse under cool water until thawed. Pat dry with a clean kitchen towel.
  2. Cook the bacon: Heat a skillet over medium heat and cook the bacon until crispy. Transfer to a paper towel-lined plate to drain excess grease, then crumble into small pieces once cooled.
  3. Prepare the dressing: In a small bowl, whisk together mayonnaise, sour cream, vinegar, and a pinch of salt and pepper. Taste and adjust seasoning if needed.
  4. Combine ingredients: In a large mixing bowl, add the thawed peas, shredded cheddar, diced red onion, and crumbled bacon.
  5. Toss with dressing: Pour the dressing over the salad and gently toss until everything is evenly coated. Be careful not to mash the peas!
  6. Chill: Cover the bowl with plastic wrap and refrigerate for at least 1 hour to let the flavors meld together.
  7. Garnish and serve: Before serving, sprinkle with fresh parsley for a pop of color and freshness.

Notes

Chill the salad for at least 1 hour to enhance the flavors. If the salad seems dry after chilling, add more mayonnaise or sour cream before serving.
