Creamy Smoked Gouda Broccoli Soup

A velvety, smoky broccoli soup featuring smoked Gouda and tender vegetables, perfect for cozy evenings or entertaining guests.

  • 4 cups fresh broccoli florets
  • 1 ½ cups shredded smoked Gouda
  • 2 tablespoons unsalted butter
  • 1 yellow onion, finely chopped
  • 2 garlic cloves, minced
  • 4 cups chicken or vegetable broth (low-sodium)
  • 1 cup heavy cream
  • 2 tablespoons all-purpose flour
  • Salt and pepper to taste
  • Pinch of nutmeg

Instructions

  1. Chop the broccoli florets into bite-sized pieces and finely chop the onion and garlic.
  2. In a large soup pot, melt 2 tablespoons of unsalted butter over medium heat. Add the onion and garlic, cooking until fragrant and softened, about 3 minutes.
  3. Sprinkle in 2 tablespoons of all-purpose flour and whisk constantly for about 1 minute to create a roux.
  4. Slowly pour in 4 cups of chicken or vegetable broth while whisking to avoid lumps. Bring to a simmer.
  5. Add the chopped broccoli and cook for 10 minutes, stirring occasionally, until the broccoli is tender.
  6. Lower the heat and stir in 1 cup of heavy cream. Add a pinch of nutmeg, salt, and pepper to taste.
  7. Using an immersion blender, blend the soup until smooth and creamy. If you prefer a chunkier texture, blend only half the soup.
  8. Stir in 1 ½ cups of shredded smoked Gouda until fully melted and combined. Taste and adjust seasoning as needed.
  9. Serve hot, garnished with additional shredded Gouda or fresh parsley, if desired.
