Instructions

  1. Pat dry 2 pounds of beef chuck cubes with paper towels and season generously with salt and pepper.
  2. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Brown beef in batches for 3-4 minutes per batch. Transfer browned beef to the slow cooker.
  3. In the same skillet, sauté chopped onion until translucent, about 5 minutes. Add minced garlic and sliced mushrooms, cooking until mushrooms release moisture and begin to brown, about 7 minutes.
  4. Transfer onion, garlic, and mushroom mixture to the slow cooker with the beef. Pour in 2 cups beef broth, 1 tablespoon Worcestershire sauce, and 1 teaspoon Dijon mustard. Stir gently to combine.
  5. Cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours until beef is fork-tender.
  6. About 30 minutes before serving, mix 2 tablespoons flour with 1 cup sour cream until smooth. Stir into the slow cooker sauce. Cover and continue cooking on low.
  7. Cook 12 ounces egg noodles according to package instructions until al dente. Drain well.
  8. Taste the stroganoff sauce and adjust salt and pepper as needed. If too thick, add a splash of beef broth to loosen.
  9. Serve the creamy beef stroganoff over warm egg noodles. Garnish with fresh parsley if desired.
