  • 4 red bell peppers
  • 6 Roma tomatoes
  • 1 yellow onion, diced
  • 4 garlic cloves, peeled
  • 4 cups vegetable broth (or chicken broth)
  • 1 cup heavy cream (or coconut milk for dairy-free)
  • 2 tablespoons olive oil
  • 1 tablespoon butter (optional)
  • 1 teaspoon smoked paprika
  • Salt and pepper, to taste
  • Fresh basil leaves, for garnish

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Slice the red peppers in half and remove the seeds. Halve the tomatoes and peel the garlic cloves. Place them on a baking sheet alongside the diced onion.
  3. Drizzle the vegetables with olive oil and season with salt and pepper.
  4. Roast the vegetables for 25-30 minutes, or until soft and slightly charred. The peppers should have a blistered skin.
  5. Let the roasted peppers cool slightly, then peel off the skin.
  6. Transfer the roasted vegetables to a blender. Add the vegetable broth and blend until smooth.
  7. Pour the blended mixture into a large pot and bring to a gentle simmer over medium heat. Stir in the smoked paprika and butter.
  8. Reduce the heat to low and slowly stir in the heavy cream. Let it heat through for 5-7 minutes, stirring occasionally.
  9. Taste and adjust seasoning with more salt and pepper if needed. Add more broth if the bisque is too thick.
  10. Serve the bisque in bowls and garnish with fresh basil leaves. Pair with crusty bread for dipping.
