  • 2 tablespoons (15g) all-purpose flour
  • 1/2 cup (60g) all-purpose flour
  • 1/4 cup (50g) brown sugar
  • 1/4 teaspoon ground cinnamon
  • 1/4 cup (57g) unsalted butter, cold and cubed

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×9-inch baking pan or line it with parchment paper.
  2. In a mixing bowl, combine 1 cup (120g) flour, 1/4 cup (50g) sugar, and 1/4 teaspoon salt. Add 1/2 cup (113g) softened butter and mix until the dough comes together. Press the crust mixture evenly into the prepared pan and bake for 10 minutes. Remove from oven and let it cool slightly.
  3. In a medium bowl, whisk together 1/2 cup (120g) sour cream, 1/3 cup (66g) sugar, 1 egg, 1 teaspoon vanilla, and 2 tablespoons (15g) flour until smooth. Gently fold in the diced peaches. Pour the filling over the partially baked crust, spreading evenly.
  4. In a bowl, combine 1/2 cup (60g) flour, 1/4 cup (50g) brown sugar, and 1/4 teaspoon cinnamon. Add 1/4 cup (57g) cold butter cubes and cut them into the mixture using a pastry cutter or fork until crumbly. Sprinkle the streusel evenly over the peach filling.
  5. Place the pan in the oven and bake for 35-40 minutes, or until the top is golden brown and the filling is set.
  6. Allow the bars to cool completely before slicing. Refrigerate for an hour for cleaner cuts.
