A quick and easy one-pot pasta dish featuring creamy white beans, sun-dried tomatoes, and spinach, ready in just 30 minutes. This comforting recipe delivers rich flavor without heavy cream or cheese.

Ingredients

Scale
  • 8 oz penne or rigatoni pasta
  • 1 can (15 oz) cannellini beans, drained and rinsed
  • 1/4 cup sun-dried tomatoes, chopped (preferably packed in oil)
  • 3 cloves garlic, minced
  • 3 cups vegetable broth, low sodium
  • 2 tablespoons olive oil, plus extra for finishing
  • 2 cups baby spinach, loosely packed
  • 1 teaspoon dried Italian herbs (oregano, basil, thyme mix)
  • Salt and pepper to taste
  • 1/4 cup grated Parmesan cheese (optional)

Instructions

  1. Prepare Ingredients (5 minutes): Mince the garlic, chop the sun-dried tomatoes, and rinse the white beans under cold water. Set everything within reach.
  2. Sauté Garlic and Tomatoes (4 minutes): Heat 2 tablespoons of olive oil over medium heat in a large deep skillet or wide pot. Add the minced garlic and sun-dried tomatoes. Stir frequently until fragrant and garlic is just turning golden, about 2-3 minutes. Watch closely to avoid burning.
  3. Add Herbs and Beans (2 minutes): Sprinkle in the dried Italian herbs and stir for 30 seconds. Then add the rinsed white beans, stirring gently to combine.
  4. Add Pasta and Broth (1 minute): Pour in the dry pasta and vegetable broth all at once. Stir to ensure pasta is mostly submerged.
  5. Cook Pasta (12-15 minutes): Bring mixture to a boil, then reduce to a steady simmer. Cook uncovered, stirring every few minutes to prevent sticking. Pasta will absorb broth and starch will thicken sauce. Add more broth or water if liquid evaporates too fast before pasta is tender.
  6. Check Pasta Texture (1 minute): Taste a piece to check for doneness; it should be al dente but tender.
  7. Add Spinach and Finish (2 minutes): Stir in baby spinach and let it wilt. Season with salt and pepper to taste. Drizzle a little more olive oil if desired.
  8. Serve: Dish pasta into bowls and sprinkle with grated Parmesan cheese if desired.

Notes

If sauce is thin at the end, cook a minute or two longer off heat with lid off to thicken. Stir gently and frequently to help beans break down and create creamy texture without mushiness. Use sun-dried tomatoes packed in oil for richer flavor; soak dry ones before use. For vegan version, omit Parmesan or use plant-based alternative. For gluten-free, use gluten-free pasta and check broth ingredients.
