  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup chicken broth (low sodium preferred)
  • 1/2 cup grated Parmesan cheese
  • Juice and zest of one medium lemon
  • Salt and black pepper, to taste
  • Red pepper flakes (optional)
  • Fresh parsley, chopped (for garnish)
  • Extra lemon wedges (for serving)

Instructions

  1. Peel and devein the shrimp if not already done. Mince the garlic, zest, and juice the lemon. Measure out the cream, broth, and Parmesan.
  2. Heat 2 tablespoons of olive oil in a large deep skillet over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant but not browned.
  3. Add the shrimp to the skillet, season with salt and pepper, and cook for 2-3 minutes on each side until pink and opaque. Remove shrimp and set aside.
  4. Pour in the chicken broth and heavy cream, stirring to combine. Bring to a gentle simmer, then add the linguine in a single layer if possible, pressing down gently to submerge.
  5. Simmer the pasta for about 10-12 minutes, stirring occasionally to prevent sticking. Add more broth or water if it looks too dry before pasta is tender.
  6. Once pasta is al dente and most liquid is absorbed, stir in Parmesan cheese, lemon juice, and lemon zest. Season with additional salt, pepper, and red pepper flakes if using.
  7. Return the shrimp to the pan and gently toss to combine with the creamy linguine. Heat for another minute to warm the shrimp through without overcooking.
  8. Garnish with chopped parsley and serve immediately with lemon wedges on the side.

Notes

Avoid burning garlic by sautéing just until fragrant. Remove shrimp before simmering pasta to prevent overcooking. Stir pasta occasionally to prevent sticking. Add extra broth or cream if sauce thickens too much. Use freshly grated Parmesan for best flavor and sauce texture.
