A quick and easy one-pot chicken Alfredo pasta recipe that combines tender chicken, creamy sauce, and perfectly cooked fettuccine for a comforting and satisfying dinner.

Ingredients

  • Chicken breasts, boneless and skinless, cut into bite-sized pieces
  • Olive oil, for sautéing
  • Unsalted butter, about 2 tablespoons
  • Garlic cloves, minced (3 cloves)
  • All-purpose flour, 2 tablespoons
  • Chicken broth, 2 cups (low sodium preferred)
  • Heavy cream, 1 cup
  • Fettuccine pasta, about 8 ounces
  • Parmesan cheese, freshly grated, 1 cup
  • Salt and black pepper, to taste
  • Fresh parsley, chopped, for garnish (optional)

Instructions

  1. Pat the chicken pieces dry with paper towels. Season with salt and pepper. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add chicken in a single layer and cook for about 4-5 minutes per side until golden and cooked through. Remove chicken and set aside.
  2. Lower heat to medium. Add butter and remaining olive oil to the pan. Once butter melts and starts to foam, add the minced garlic. Stir constantly for about 30 seconds to 1 minute until fragrant but not browned.
  3. Sprinkle the all-purpose flour over the melted butter and garlic. Stir well to combine and cook for 1-2 minutes, stirring constantly.
  4. Slowly pour in the chicken broth while whisking to avoid lumps. Then add the heavy cream and stir. Bring the mixture to a gentle simmer. Add the uncooked fettuccine pasta, gently pressing it down so it’s mostly submerged.
  5. Cook the pasta in the sauce for about 12-15 minutes, stirring occasionally to prevent sticking. If the liquid looks too dry before the pasta is tender, add a splash more broth or cream.
  6. When the pasta is tender and the sauce is creamy, stir in the cooked chicken back into the pan. Add the freshly grated Parmesan cheese and stir until melted and fully incorporated. Taste and adjust seasoning with salt and pepper.
  7. Sprinkle chopped fresh parsley over the top before serving.

Notes

If sauce is too thick, add more chicken broth or cream a tablespoon at a time. Use fresh Parmesan for best melting and flavor. Stir frequently and keep heat moderate to avoid curdling. For a veggie boost, add baby spinach or peas near the end of cooking. Red pepper flakes add a gentle kick if desired.
