  • 4 medium boneless, skinless chicken breasts
  • 1/2 cup chopped sun-dried tomatoes (packed in oil preferred)
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 3 cloves garlic, minced
  • 1/2 cup freshly grated Parmesan cheese
  • 2 tablespoons chopped fresh basil
  • 2 tablespoons olive oil (extra virgin preferred)
  • Salt and pepper to taste
  • Optional: red pepper flakes
  • Optional: squeeze of lemon juice

Instructions

  1. Pat chicken breasts dry and season both sides generously with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook 4-5 minutes per side until golden brown but not fully cooked. Remove and set aside.
  3. Lower heat to medium. Sauté minced garlic for 30 seconds until fragrant.
  4. Add chopped sun-dried tomatoes and stir to release oils and flavor.
  5. Pour in heavy cream and chicken broth, scraping up browned bits from the pan.
  6. Simmer sauce gently for 3-4 minutes until slightly thickened.
  7. Stir in Parmesan cheese and fresh basil. Adjust seasoning with salt and pepper.
  8. Return chicken to the pan, nestle into sauce, cover, and simmer on low for 8-10 minutes until chicken reaches 165°F (74°C). Spoon sauce over chicken occasionally.
  9. Optional: add red pepper flakes or lemon juice before serving. Serve hot with extra sauce.

Notes

If sauce gets too thick, add a splash of broth or cream to loosen. Avoid overcrowding the pan to get a perfect sear. Use sun-dried tomatoes packed in oil for richer flavor or rehydrate dry-packed tomatoes before use. Lower heat when adding cream to prevent curdling. Fresh basil is preferred over dried for best flavor.
