  • 1 cup whole milk (240 ml)
  • 1/3 cup honey (113 g)
  • 1 tbsp dried culinary grade lavender buds (or 1 tsp lavender extract)
  • 2 1/2 tsp gelatin powder (about one packet)
  • 3 tbsp cold water (45 ml)
  • 1 tsp vanilla extract
  • 1 cup fresh berries (strawberries, blueberries, raspberries; fresh or thawed from frozen)
  • Optional garnish: mint leaves or extra honey drizzle

Instructions

  1. Bloom the gelatin: Sprinkle 2 1/2 teaspoons of gelatin over 3 tablespoons of cold water in a small bowl. Let it sit for 5–10 minutes until spongy.
  2. Infuse the lavender: In a medium saucepan, combine 2 cups heavy cream, 1 cup whole milk, 1/3 cup honey, and 1 tablespoon dried lavender buds. Warm over medium heat until hot but not boiling (about 170°F / 77°C). Let steep off heat for 10 minutes.
  3. Strain the cream: Pour the infused cream through a fine mesh sieve into a clean bowl to remove lavender buds, pressing gently to extract flavor.
  4. Add gelatin: Warm the bloomed gelatin briefly until melted but not hot. Stir into the warm cream mixture until combined.
  5. Finish with vanilla: Stir in 1 teaspoon vanilla extract.
  6. Pour and chill: Divide mixture evenly into 4-6 ramekins or glasses. Let cool slightly, cover, and refrigerate for at least 4 hours or overnight until set.
  7. Prepare berries: Rinse and pat dry 1 cup fresh berries. Drizzle with honey if desired.
  8. Serve: Garnish panna cotta with fresh berries and mint or extra honey drizzle. Serve chilled.

Notes

Do not rush gelatin blooming to avoid grainy texture. Heat cream mixture gently without boiling to prevent curdling. Strain well to remove lavender bits for smooth texture. Use quality honey for best flavor. Chill panna cotta at least 4 hours or overnight for best set. For dairy-free version, substitute cream and milk with coconut and almond milk. To unmold, dip ramekins briefly in hot water and invert.
