A quick and easy homemade version of the classic Hamburger Helper Stroganoff, made with simple ingredients and a creamy sauce that delivers comforting, nostalgic flavors without preservatives.

  • 8 oz white or cremini mushrooms, finely chopped
  • 1 medium yellow onion, finely diced
  • 2 garlic cloves, minced
  • 2 tablespoons all-purpose flour
  • 2 cups beef broth (homemade or low sodium store-bought)
  • 3/4 cup sour cream (full fat recommended)
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon smoked paprika
  • Salt and freshly ground black pepper, to taste
  • 8 oz egg noodles
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Bring a large pot of salted water to a boil. Add egg noodles and cook according to package instructions until al dente, about 7-8 minutes. Drain and set aside. Toss with a tiny drizzle of oil to prevent sticking.
  2. Heat a large skillet over medium-high heat. Add ground beef, breaking it apart with a wooden spoon. Cook until browned and no longer pink, about 6-8 minutes. Drain excess fat if necessary, leaving a little for flavor.
  3. Reduce heat to medium. Add diced onion and minced garlic to the beef. Cook for 3-4 minutes until softened and fragrant. Stir in finely chopped mushrooms and cook until they release moisture and start to brown, about 5 minutes.
  4. Sprinkle all-purpose flour evenly over the beef and veggies. Stir well to coat and cook for 1-2 minutes to remove raw flour taste.
  5. Slowly pour in beef broth while stirring constantly to avoid lumps. Add Worcestershire sauce, smoked paprika, salt, and pepper. Bring to a gentle simmer and cook for 5-7 minutes until sauce thickens and coats the back of a spoon.
  6. Remove pan from heat and stir in sour cream until fully incorporated. Do not boil after adding sour cream to prevent curdling.
  7. Add cooked noodles to the skillet and gently fold to coat noodles in the creamy sauce. Heat through for 1-2 minutes over low heat if needed.
  8. Garnish with freshly chopped parsley if desired and serve immediately.

For gluten-free, substitute flour with gluten-free blend or cornstarch and use gluten-free noodles. For dairy-free, use coconut cream or cashew cream instead of sour cream. Add sour cream or yogurt off heat to avoid curdling. Browning beef properly is key for flavor. Finely chop mushrooms for a smooth sauce texture. Adjust sauce thickness by adding broth or simmering longer.
