  • 2 cups cooked ham, diced or shredded
  • 2 cups elbow macaroni or any short pasta, cooked al dente
  • 2 cups shredded cheddar cheese
  • 2 cups whole milk
  • 2 tablespoons all-purpose flour
  • 2 tablespoons unsalted butter
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste
  • 1/2 cup breadcrumbs (optional)

Instructions

  1. Boil pasta in a large pot of salted water until al dente, about 8-10 minutes. Drain and set aside.
  2. In a medium saucepan, melt butter over medium heat. Add flour and whisk continuously for 1-2 minutes to form a roux.
  3. Gradually pour in milk while whisking to prevent lumps. Cook for 4-5 minutes, stirring frequently, until thickened.
  4. Reduce heat to low and stir in shredded cheddar cheese until melted and smooth. Mix in Dijon mustard, then season with salt and pepper to taste.
  5. Combine cooked pasta, diced ham, and cheese sauce in a large pot or mixing bowl. Stir until evenly coated.
  6. Transfer mixture to a greased 9×13-inch baking dish, spreading it out evenly.
  7. If using breadcrumbs, sprinkle them over the top for extra crunch.
  8. Bake in a preheated oven at 375°F (190°C) for 20-25 minutes, or until the top is golden and bubbling.
  9. Let the casserole rest for 5 minutes before serving.

Notes

Customize the flavor with nutmeg or garlic powder, use freshly grated cheese for better melting, and make it ahead for convenience. If the sauce is too thick, add a splash of milk; if too thin, simmer longer.
