  • 1.5 pounds baby potatoes, washed and halved
  • 1 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese
  • 4 cloves garlic, minced
  • 2 tablespoons unsalted butter, melted
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Fresh parsley, chopped (optional)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Wash and halve the baby potatoes. Toss them in a mixing bowl with olive oil, salt, and black pepper. Spread them evenly on the prepared baking sheet.
  3. Bake the potatoes for 20-25 minutes, flipping halfway through, until golden brown and fork-tender.
  4. Melt butter in a small saucepan over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.
  5. Pour heavy cream into the saucepan and stir well. Bring to a gentle simmer and let it thicken for around 5 minutes. Stir in Parmesan cheese until melted and smooth. Remove from heat.
  6. Transfer the roasted potatoes back to the mixing bowl and pour the creamy garlic Parmesan sauce over them. Toss until every potato is coated evenly.
  7. Garnish with fresh parsley and additional Parmesan, if desired. Serve warm and enjoy!
