  • 1 tablespoon lemon juice (freshly squeezed)
  • 1/2 cup unsalted butter (melted and slightly cooled)
  • Pinch of cayenne pepper (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Cube sourdough bread into 1-inch pieces and dice Canadian bacon or ham.
  2. In a large bowl, whisk together 6 eggs, 1 cup milk or half-and-half, salt, pepper, and Dijon mustard until frothy.
  3. Add bread cubes, diced Canadian bacon, and shredded cheese (if using) to the egg mixture. Stir gently to combine.
  4. Pour mixture into a greased 9×13-inch baking dish, spreading evenly and pressing down gently.
  5. Bake for 35-40 minutes until set in the center and golden brown on top. Cover loosely with foil if edges brown too fast.
  6. While baking, prepare hollandaise: whisk 3 egg yolks and lemon juice in a heatproof bowl until lightened in color.
  7. Place bowl over simmering water (double boiler), ensuring water does not touch bowl bottom.
  8. Slowly drizzle in melted butter while whisking constantly until sauce thickens (3-5 minutes).
  9. Remove from heat, season with cayenne pepper and salt to taste. If too thick, whisk in a teaspoon of warm water to loosen.
  10. Let casserole cool 5 minutes after baking. Drizzle hollandaise sauce over the top before slicing and serving.
