This creamy cucumber dill salad with red onion is a quick, refreshing side dish perfect for hot summer days. Made with simple ingredients like cucumbers, red onion, fresh dill, and a tangy sour cream dressing, it comes together in minutes and is a crowd-pleaser at any gathering.

Ingredients

Scale
  • 2 large or 3 medium cucumbers (English or Persian preferred)
  • 1 medium red onion (about ½ cup thinly sliced)
  • ¼ cup fresh dill, chopped
  • ¾ cup sour cream (full-fat recommended)
  • 2 tablespoons white vinegar
  • 1 teaspoon sugar
  • ½ teaspoon salt (plus 1 teaspoon kosher salt for salting cucumbers)
  • ¼ teaspoon freshly ground black pepper

Instructions

  1. Wash cucumbers thoroughly. If using English or Persian cucumbers, leave skin on. Slice into thin rounds, about ⅛-inch thick.
  2. Place sliced cucumbers in a large bowl and sprinkle with 1 teaspoon kosher salt. Toss gently to coat. Let sit for 15-20 minutes to draw out moisture.
  3. While cucumbers rest, thinly slice red onion into half-moons. Place in a small bowl and cover with cold water. Soak for 10 minutes to mellow sharpness. Drain and pat dry.
  4. In a small bowl, whisk together sour cream, white vinegar, sugar, ½ teaspoon salt, and black pepper. Taste and adjust seasoning if desired.
  5. After 15-20 minutes, pour cucumbers into a colander and rinse quickly with cold water to remove excess salt. Shake off water and pat dry with a clean towel or paper towels.
  6. In a large bowl, toss drained cucumbers, soaked red onion, and chopped fresh dill together.
  7. Pour dressing over the mixture and gently fold until everything is evenly coated.
  8. Cover bowl and refrigerate for at least 30 minutes (up to 1 hour for best flavor). Before serving, give a final stir and adjust seasoning if needed.

Notes

Salting the cucumbers is crucial to prevent a watery salad. Soaking the red onion in cold water tames its bite. For best results, let the salad chill for at least 30 minutes before serving. If making ahead, prepare components separately and combine about an hour before serving. Store leftovers in an airtight container in the refrigerator for up to 2 days. Do not freeze.
