  • 2 pounds boneless, skinless chicken breasts
  • 8 slices thick-cut bacon, chopped
  • 8 ounces cream cheese, softened
  • 1 packet (about 1 ounce) ranch seasoning mix
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream (optional)
  • 1 teaspoon garlic powder
  • Black pepper to taste
  • 2 stalks green onions, thinly sliced for garnish

Instructions

  1. Chop the bacon into bite-sized pieces. Cook in a skillet over medium heat until crispy, about 6 to 8 minutes. Drain on paper towels and set aside.
  2. Place chicken breasts in the bottom of the crockpot in a single layer. Sprinkle garlic powder and black pepper evenly over the chicken.
  3. Cut softened cream cheese into chunks and scatter over the chicken. Sprinkle ranch seasoning packet evenly on top.
  4. Cover and cook on low for 4 hours or until chicken reaches an internal temperature of 165°F and is tender.
  5. Remove chicken breasts and shred with two forks directly in the crockpot.
  6. Stir in shredded cheddar cheese, sour cream (if using), and cooked bacon pieces until cheese melts and sauce is creamy.
  7. Cover and cook on low for another 15 to 20 minutes to meld flavors and warm through.
  8. Sprinkle sliced green onions on top before serving.

Notes

Crisp the bacon first for best texture and flavor. Soften cream cheese at room temperature before use to avoid lumps. If sauce is too thick, add chicken broth or milk to loosen. If too thin, add more cheese or cook uncovered for a few minutes. Can be adapted for stovetop or Instant Pot.
