Instructions

  1. Peel and quarter 2 pounds of Russet potatoes, ensuring the pieces are roughly the same size.
  2. Place the potatoes in a large pot and cover with cold, salted water. Bring to a boil over medium-high heat and cook for 15-20 minutes, or until fork-tender.
  3. Drain the potatoes thoroughly and return them to the pot. Let them sit for a minute or two to evaporate any remaining moisture.
  4. Add 4 ounces of softened cream cheese, 4 tablespoons of unsalted butter, and 1/4 cup of heavy cream to the pot. Mash the potatoes using a potato masher or ricer until smooth and creamy.
  5. Season with 1 teaspoon of salt and 1/2 teaspoon of black pepper. Taste and adjust seasoning as needed. Add 1/2 teaspoon of garlic powder if desired.
  6. Transfer the mashed potatoes to a serving dish and garnish with chopped chives or parsley.
