A comforting, creamy side dish featuring fresh spinach blended with a luscious, cheesy sauce. Perfect for elevating any dinner table.

Ingredients

Scale
  • 1 pound fresh spinach, washed and stemmed
  • 2 tablespoons unsalted butter
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1/4 cup milk
  • 2 ounces cream cheese, softened
  • 1/4 cup Parmesan cheese, grated
  • 1/4 teaspoon nutmeg, freshly grated
  • Salt and pepper to taste

Instructions

  1. Wash and stem the spinach, pat it dry with a clean towel, and set it aside.
  2. Heat 1 tablespoon of butter in a large skillet over medium heat. Add the spinach and cook until wilted, about 2-3 minutes. Remove from the skillet and set aside.
  3. In the same skillet, melt the remaining tablespoon of butter. Add the minced garlic and sauté until fragrant, about 1 minute.
  4. Pour in the heavy cream and milk, stirring to combine. Add the cream cheese and whisk until smooth. Lower the heat to prevent the cream from boiling.
  5. Stir in the Parmesan cheese, nutmeg, salt, and pepper. Taste and adjust seasoning as needed.
  6. Return the cooked spinach to the skillet and stir until fully coated in the sauce. Cook for another 2-3 minutes to allow the flavors to meld.
  7. Transfer the creamed spinach to a serving dish and garnish with extra Parmesan if desired. Serve warm.

Notes

[‘Don’t overcook the spinach to avoid a mushy texture.’, ‘Grating fresh nutmeg adds a noticeable difference in flavor.’, ‘Taste the sauce as you go to balance the seasoning.’, ‘Keep the heat low when making the sauce to prevent separation.’, ‘You can blanch the spinach ahead of time to save prep time.’]
