  • 2 boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
  • 1 cup bell peppers (any color, sliced)
  • 1 cup broccoli florets
  • 1 cup carrots (thinly sliced)
  • 1 cup snap peas
  • 2 cloves garlic, minced
  • 2 tablespoons soy sauce (low-sodium preferred)
  • 1/2 cup heavy cream (or coconut milk for dairy-free)
  • 1/2 cup chicken broth
  • 1 tablespoon cornstarch
  • 3 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Slice the chicken into bite-sized pieces, chop the vegetables, and mince the garlic. Set everything aside for easy access.
  2. In a mixing bowl, whisk together the heavy cream, chicken broth, soy sauce, and cornstarch until smooth. Set aside.
  3. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the chicken pieces, season with salt and pepper, and cook for 5-7 minutes or until fully cooked and golden brown. Remove the chicken and set aside.
  4. In the same skillet, add another tablespoon of olive oil. Toss in the garlic and cook for 30 seconds until fragrant. Add the bell peppers, broccoli, carrots, and snap peas. Stir-fry for 5-6 minutes until the vegetables are tender but still crisp.
  5. Return the chicken to the skillet with the vegetables. Pour the prepared sauce over the top and stir well to coat everything evenly.
  6. Lower the heat to medium and let the sauce cook for 3-4 minutes until slightly thickened. Stir occasionally to prevent sticking.
