  • 8 oz (225 g) sharp cheddar cheese, shredded
  • 4 oz (115 g) cream cheese, softened
  • 1/2 cup (120 ml) malty lager or amber ale beer
  • 1/2 tsp garlic powder
  • 1 tsp Dijon mustard
  • 1 tsp Worcestershire sauce
  • 1/2 tsp smoked paprika
  • Salt to taste (start with 1/4 tsp)
  • Black pepper to taste
  • 1 tbsp all-purpose flour
  • 1 tbsp (14 g) butter

Instructions

  1. Shred 8 ounces (225 grams) of sharp cheddar cheese and soften 4 ounces (115 grams) of cream cheese by leaving it out at room temperature.
  2. In a medium saucepan over medium heat, melt 1 tablespoon (14 grams) of butter.
  3. Whisk in 1 tablespoon of all-purpose flour and cook for 1-2 minutes until light golden and nutty smelling.
  4. Gradually pour in 1/2 cup (120 ml) of beer while whisking constantly to thicken the mixture slightly.
  5. Add the softened cream cheese and whisk until fully melted and smooth.
  6. Lower heat to medium-low and slowly add shredded cheddar cheese in small handfuls, stirring constantly until melted and smooth.
  7. Stir in garlic powder, Dijon mustard, Worcestershire sauce, smoked paprika, salt, and pepper to taste. Adjust seasoning as needed.
  8. Keep the dip warm on the lowest heat setting or transfer to a warm serving bowl, stirring occasionally to maintain creaminess.

Notes

Use block cheese instead of pre-shredded to avoid grainy texture. Add cheese slowly over low heat to prevent clumping. For gluten-free, substitute flour and beer accordingly. If dip thickens too much, stir in a splash of beer or milk. Reheat gently to maintain texture.
