These Cracker Jack caramel popcorn balls are a nostalgic, sweet and salty treat with a chewy caramel coating and crunchy popcorn. Easy to make and perfect for sharing, they bring back the classic fairground flavor with simple pantry ingredients.

  • ½ cup (113g) unsalted butter, melted
  • 1 cup packed brown sugar (light and dark combined or all one kind)
  • ½ cup light corn syrup
  • 2 tablespoons honey
  • 1 teaspoon pure vanilla extract
  • ½ teaspoon baking soda
  • ½ teaspoon sea salt, plus a pinch for sprinkling
  • Optional: ½ cup roasted peanuts or chopped nuts
  • Optional substitutions: maple syrup for honey and corn syrup

Instructions

  1. Pop about ½ cup (100g) of kernels to yield roughly 10 cups of popcorn. Remove any unpopped kernels and transfer popcorn to a large bowl.
  2. Line a baking sheet with parchment paper or a silicone mat and lightly butter your hands to prevent sticking.
  3. In a heavy-bottomed saucepan, melt ½ cup (113g) unsalted butter over medium heat.
  4. Stir in 1 cup (220g) packed brown sugar, ½ cup (120ml) light corn syrup, and 2 tablespoons (42g) honey. Bring to a gentle boil, stirring constantly.
  5. Let boil for 3 to 4 minutes without stirring, then remove from heat.
  6. Stir in 1 teaspoon vanilla extract, ½ teaspoon baking soda, and ½ teaspoon sea salt. The mixture will foam up slightly.
  7. Immediately pour the hot caramel over the popcorn and gently fold to coat evenly without crushing the popcorn.
  8. While warm but cool enough to handle (about 5 minutes), scoop generous handfuls and press into balls about 3 inches (7.5 cm) in diameter using buttered hands.
  9. Place popcorn balls on the prepared baking sheet and let cool at room temperature for at least 30 minutes until firm.
  10. Optional: Sprinkle a tiny pinch of sea salt over each popcorn ball once cooled.

Use fresh-popped popcorn for best texture. Butter your hands generously to prevent sticking when shaping balls. Control heat carefully to avoid burning caramel. Baking soda aerates caramel for lighter texture. If caramel hardens too fast, warm gently on low heat to soften. Store wrapped tightly at room temperature for 3-4 days or refrigerated up to a week.
