  • ¼ cup (50g) granulated sugar
  • 1 large egg yolk
  • 1 teaspoon vanilla extract
  • 2 tablespoons granulated sugar (for topping)
  • 1 teaspoon ground cinnamon (for topping)
  • 1 tablespoon unsalted butter, melted (for brushing before topping)

Instructions

  1. Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with liners or lightly grease with cooking spray.
  2. In a large bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger.
  3. In a separate bowl, whisk melted butter with granulated sugar and brown sugar until smooth.
  4. Beat in eggs one at a time, then stir in pumpkin puree and vanilla extract.
  5. Add buttermilk and stir gently to combine.
  6. Gradually fold dry ingredients into the wet mixture until just combined; avoid overmixing.
  7. In a medium bowl, beat softened cream cheese, sugar, egg yolk, and vanilla extract until smooth and creamy.
  8. Spoon about 2 tablespoons of pumpkin batter into each muffin cup. Add 1 tablespoon of cream cheese mixture on top, then cover with another 2 tablespoons of pumpkin batter. Gently swirl the cream cheese through the batter with a skewer or knife to create marbled patterns.
  9. Brush muffin tops lightly with melted butter. Mix sugar and cinnamon in a small bowl, then sprinkle evenly over each muffin.
