A quick and easy breakfast sandwich featuring crispy thick-cut bacon, sunny-side up eggs, and cream cheese on toasted everything bagels. Perfect for cozy mornings and satisfying brunches.

  • 2 everything bagels, sliced in half
  • 6 slices thick-cut bacon
  • 2 large eggs, room temperature
  • 1 tablespoon unsalted butter, softened
  • 2 tablespoons cream cheese, softened
  • Salt and freshly ground black pepper, to taste
  • Optional: fresh spinach leaves
  • Optional: sliced tomato
  • Optional: sliced avocado
  • Optional: sriracha mixed with cream cheese for a spicy kick

Instructions

  1. Place the 6 slices of thick-cut bacon in a cold skillet without overlapping. Turn heat to medium and cook for 8-12 minutes, flipping occasionally until crispy but not burnt. Drain on paper towels and set aside.
  2. While bacon cooks, slice the everything bagels in half and toast until golden and lightly crisp, about 2-3 minutes. Spread about 1 tablespoon of softened cream cheese on each bagel half immediately after toasting.
  3. In the same skillet with a little bacon fat left, melt 1 tablespoon butter over medium-low heat. Crack eggs gently into the pan and cook sunny-side up for 3-4 minutes until whites are set but yolks remain runny. For over-easy eggs, flip carefully and cook an additional 30 seconds. Season with salt and freshly ground pepper.
  4. Assemble the sandwich by layering the bottom bagel halves with eggs, then evenly distribute crispy bacon slices on top. Add optional fresh spinach or tomato slices if desired. Cap with the top bagel halves and press down gently.
  5. Serve immediately while warm, with the bagel crisp, bacon crunchy, and egg creamy.
