  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/4 cup brown sugar, packed
  • 2 tbsp granulated sugar
  • 1 tbsp ground cinnamon
  • 2 tbsp unsalted butter, melted
  • 3/4 cup powdered sugar
  • 2 tbsp milk or cream
  • 1/4 tsp vanilla extract

Instructions

  1. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  2. In a larger bowl, beat the softened butter and sugar until light and fluffy (about 2-3 minutes). Add the egg and vanilla extract, mixing until combined.
  3. Gradually add the dry ingredients to the wet mixture, stirring just until a dough forms.
  4. Wrap the dough in plastic wrap and refrigerate for 30 minutes to make it easier to roll out.
  5. In a small bowl, mix the brown sugar, granulated sugar, and cinnamon. Set aside.
  6. On a lightly floured surface, roll out the dough into a rectangle, about 1/4 inch thick. Brush the melted butter evenly over the surface.
  7. Sprinkle the cinnamon sugar mixture evenly over the buttered dough.
  8. Starting from one long edge, roll the dough tightly into a log. Use a sharp knife or pizza cutter to slice the log into 1/2-inch thick rounds.
  9. Preheat your oven to 350°F (175°C). Place the cookies on a baking sheet lined with parchment paper or a silicone mat, leaving about 2 inches between each cookie.
  10. Bake for 10-12 minutes, or until the edges are lightly golden.
  11. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack.
  12. In a small bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth. Drizzle over the cooled cookies.
