  • 4 cups (950 ml) apple cider, fresh or store-bought, preferably unfiltered
  • 1/4 cup (50 g) dark brown sugar
  • 2 cinnamon sticks
  • 1-inch piece fresh ginger, sliced (optional but recommended)
  • 45 whole cloves
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon pure vanilla extract
  • 1 star anise pod (optional)
  • 1/2 cup (120 ml) water

Instructions

  1. In a medium saucepan, combine water and brown sugar over medium heat. Stir gently until sugar dissolves completely to create a rich syrup base.
  2. Add cinnamon sticks, sliced ginger, whole cloves, and star anise if using. Stir briefly to mix.
  3. Simmer the mixture uncovered for about 10 minutes, keeping the heat low to medium to avoid boiling too hard.
  4. Pour in the apple cider and stir to combine. Increase heat just enough to bring to a low simmer again.
  5. Simmer everything together for about 10 minutes to allow flavors to marry and the cider to take on a rich amber color.
  6. Remove from heat and strain the mixture through a fine mesh strainer or cheesecloth into a heatproof pitcher, discarding solids.
  7. Stir in fresh lemon juice and vanilla extract to brighten and round off the flavors.
  8. Serve warm in mugs, garnished with a cinnamon stick or thin apple slice if desired.

Notes

Keep heat low to medium to avoid burning the sugar syrup. Use whole spices for a smooth infusion and remove them after simmering. Add lemon juice to balance sweetness. If too sweet, add water or more lemon juice. For more spice, add extra cinnamon or a pinch of nutmeg. Can be served cold over ice with reduced sugar. Store leftovers refrigerated up to 3 days and reheat gently with a splash of water or lemon juice.
