  • 23 tablespoons (3045 ml) milk (for frosting, adjust for consistency)

Instructions

  1. Brown the butter: In a medium skillet over medium heat, melt ½ cup (115 g) unsalted butter. Stir constantly as it foams and then browns to a deep golden color with a nutty aroma (about 5-7 minutes). Remove from heat and let cool slightly.
  2. Prep the zucchini: Grate about 2 medium zucchini using a fine grater or food processor. Place shredded zucchini in a clean kitchen towel and squeeze out excess moisture.
  3. Mix dry ingredients: In a large bowl, whisk together flour, baking powder, baking soda, salt, and 1 teaspoon ground cinnamon. Set aside.
  4. Cream sugars and butter: In another large bowl, combine browned butter with granulated sugar and brown sugar. Beat with mixer or whisk until well combined and slightly fluffy (2-3 minutes).
  5. Add eggs and vanilla: Beat in eggs one at a time, fully incorporating each before adding the next. Stir in 1 ½ teaspoons vanilla extract.
