  • 1/3 cup (40g) chopped walnuts
  • 2 tablespoons (25g) brown sugar
  • 2 tablespoons (16g) all-purpose flour
  • 1/2 teaspoon ground cinnamon (optional)
  • 2 tablespoons (28g) unsalted butter, cold and cubed

Instructions

  1. In a medium saucepan, melt 1/2 cup unsalted butter over medium heat. Swirl occasionally until the butter foams and milk solids brown to a golden amber color (about 4-6 minutes). Remove from heat and pour into a heatproof bowl to cool slightly.
  2. In a large bowl, mash 3 medium ripe bananas with a fork until mostly smooth with some lumps. Stir in the browned butter, granulated sugar, brown sugar, eggs, and vanilla extract until combined.
  3. In a separate bowl, whisk together the flour, baking soda, and salt.
  4. Gently fold the dry ingredients into the wet mixture using a rubber spatula until no dry flour streaks remain. Fold in 1/2 cup toasted chopped walnuts.
  5. Prepare the streusel by combining chopped walnuts, brown sugar, flour, and cinnamon in a small bowl. Cut in cold cubed butter with fingers or a pastry cutter until mixture resembles coarse crumbs.
  6. Pour batter into a greased 9×5-inch loaf pan and evenly sprinkle the streusel topping over the batter.
  7. Bake in a preheated 350°F (175°C) oven for 55-60 minutes. Check doneness by inserting a toothpick; it should come out clean or with a few moist crumbs.
  8. Allow the bread to cool in the pan for 15 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

Use a light-colored pan for browning butter to better monitor color changes. Fold dry ingredients gently to avoid tough bread. Tent with foil if streusel browns too quickly. Cool completely on a rack to keep streusel crisp. Frozen bananas can be used if thawed and drained. For dairy-free, substitute browned butter with browned coconut oil.
