Instructions

  1. Prepare the apple filling: In a non-stick skillet, melt the butter over medium heat. Add the diced apples, brown sugar, cinnamon, nutmeg (if using), and lemon juice. Cook for 5-7 minutes, stirring occasionally, until the apples soften and the mixture thickens slightly. Remove from heat and let it cool while you prep the dough.
  2. Make the cookie dough: In a large mixing bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  3. In another bowl, cream the softened butter with granulated sugar and brown sugar using a hand mixer or stand mixer until light and fluffy (about 2-3 minutes). Add the egg and vanilla extract, and mix until combined.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until a soft dough forms. Be careful not to overmix!
