  • 1/4 cup (50g) granulated sugar
  • 1/4 cup (55g) light brown sugar, packed
  • 2 tablespoons (16g) all-purpose flour
  • 1 tablespoon (15ml) fresh lemon juice
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • Pinch of salt
  • 1 cup (80g) old-fashioned rolled oats
  • 3/4 cup (95g) all-purpose flour
  • 1/2 cup (110g) light brown sugar, packed
  • 1/4 cup (50g) granulated sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup (115g or 1 stick) unsalted butter, cold and cut into small cubes

Instructions

  1. Preheat your oven to 350°F (175°C). Position a rack in the center of the oven. Lightly grease your 8×8 baking dish with butter or non-stick spray.
  2. Prepare the apples. Peel, core, and slice your apples into 1/4-inch thick pieces. You should have about 7-8 cups of sliced apples. Place them in a large mixing bowl.
  3. Make the filling. To the bowl with the apples, add the granulated sugar, light brown sugar, flour, lemon juice, cinnamon, nutmeg, and a pinch of salt. Toss everything together with a rubber spatula until the apples are evenly coated. Set aside while you make the streusel.
  4. Toast the oats (the secret step!). In a dry skillet over medium heat, add the rolled oats. Toast them, stirring constantly, for 3-4 minutes, or until they become fragrant and just start to turn a light golden brown. Transfer the toasted oats to a large mixing bowl to cool slightly.
  5. Make the streusel topping. To the bowl with the cooled toasted oats, add the flour, light brown sugar, granulated sugar, cinnamon, and salt. Whisk to combine. Add the cold, cubed butter. Using a pastry cutter, two forks, or your fingertips, cut the butter into the dry ingredients until the mixture resembles coarse sand with some pea-sized butter pieces remaining.
  6. Assemble the crisp. Pour the apple filling into your prepared baking dish and spread it into an even layer. Sprinkle the streusel topping evenly over the apples. Don’t press it down!
  7. Bake. Place the baking dish on a baking sheet (to catch any drips) and bake for 40-45 minutes, or until the topping is deep golden brown and the apple filling is bubbling up around the edges.
  8. Cool (the hardest part). Let the crisp cool on a wire rack for at least 15-20 minutes before serving.
