Cozy Apple Cider Cookies Recipe with Cinnamon Sugar

  • 1 cup (240 ml) apple cider
  • 1/2 cup (115 g) unsalted butter, softened
  • 1/2 cup (100 g) granulated sugar
  • 1/4 cup (50 g) brown sugar
  • 1 large egg, room temperature
  • 1 teaspoon (5 ml) vanilla extract
  • 1 1/2 cups (190 g) all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/4 cup (50 g) granulated sugar (for coating)
  • 1 teaspoon ground cinnamon (for coating)

Instructions

  1. Pour 1 cup (240 ml) of apple cider into a small saucepan. Bring to a boil, then reduce to a simmer until it’s reduced to about 1/4 cup (60 ml). Let it cool completely.
  2. Preheat the oven to 350°F (175°C). Line two baking sheets with parchment paper.
  3. In a mixing bowl, beat 1/2 cup (115 g) of softened unsalted butter with 1/2 cup (100 g) of granulated sugar and 1/4 cup (50 g) of brown sugar until light and fluffy, about 2 minutes.
  4. Mix in 1 large egg, 1 teaspoon (5 ml) of vanilla extract, and the cooled reduced apple cider until well combined.
  5. In a separate bowl, whisk together 1 1/2 cups (190 g) of all-purpose flour, 1 teaspoon of baking powder, 1 teaspoon of ground cinnamon, and 1/4 teaspoon of salt.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Don’t overmix.
  7. In a small bowl, combine 1/4 cup (50 g) of granulated sugar with 1 teaspoon of ground cinnamon. Scoop out tablespoon-sized portions of dough, roll them into balls, and coat each one in the cinnamon sugar mixture.
  8. Place the dough balls on the prepared baking sheets, spacing them about 2 inches apart. Bake for 10-12 minutes, or until the edges are set and the tops are slightly puffed.
  9. Let the cookies cool on the baking sheets for 5 minutes, then transfer them to a cooling rack.
