Classic Hummingbird Cake with Cream Cheese Frosting

A moist, tropical Southern-style layer cake made with banana, pineapple, warm spices, and topped with a luscious cream cheese frosting. Perfect for gatherings and easy to make with pantry staples.

  • 2 cups (250g) all-purpose flour
  • 1 1/2 cups (300g) granulated sugar
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg (optional)
  • 1/2 teaspoon salt
  • 3 large eggs, room temperature
  • 1 cup (240ml) vegetable oil
  • 1 teaspoon vanilla extract
  • 1 (8-ounce) can crushed pineapple in juice, drained
  • 1 cup (about 2 medium) ripe bananas, mashed
  • 1 cup (120g) chopped pecans or walnuts, toasted
  • 8 ounces (225g) cream cheese, softened
  • 1/2 cup (115g) unsalted butter, softened
  • 3 cups (360g) powdered sugar, sifted
  • 1 teaspoon vanilla extract (for frosting)
  • Pinch of salt (for frosting)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour two 9-inch cake pans or line with parchment paper.
  2. In a large bowl, whisk together flour, sugar, baking soda, cinnamon, nutmeg, and salt.
  3. In another bowl, beat eggs, then add vegetable oil and vanilla extract; mix until combined.
  4. Pour wet ingredients into dry ingredients and gently fold with a spatula until just combined; lumps are okay.
  5. Fold in drained crushed pineapple, mashed bananas, and toasted chopped pecans.
  6. Divide batter evenly between prepared pans and smooth tops gently.
  7. Bake for 30–35 minutes or until a toothpick inserted in the center comes out clean and cake springs back when pressed.
  8. Cool cakes in pans for 10 minutes, then invert onto cooling racks and cool completely.
  9. For frosting, beat cream cheese and butter until smooth and creamy. Gradually add powdered sugar, beating well after each addition.
  10. Stir in vanilla extract and a pinch of salt until frosting is fluffy but spreadable.
  11. Place one cake layer on serving plate, spread a thick layer of frosting on top.
  12. Add second cake layer and cover entire cake with remaining frosting, using an offset spatula to create swirls.
  13. If frosting is too thick, add a teaspoon of milk or cream to loosen; if too thin, add more powdered sugar.
  14. Chill assembled cake for 30 minutes to set frosting before serving.

Notes

Use ripe bananas for best flavor and moistness. Drain pineapple well to avoid excess moisture. Toast nuts for deeper flavor. Do not overmix batter to keep cake tender. Frost cake only when completely cooled. Chilling cake after frosting helps set the frosting.
