Cinnamon Sugar Blondies

Soft, chewy, buttery blondies with a cinnamon-sugar topping, perfect for a cozy fall dessert.

  • 1/2 cup unsalted butter, melted and slightly cooled
  • 1 cup brown sugar, packed
  • 2 tablespoons granulated sugar
  • 2 large eggs, at room temperature
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon ground cinnamon (for topping)

Instructions

  1. Preheat the oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper, leaving some overhang for easy removal.
  2. In a mixing bowl, whisk together the melted butter, brown sugar, and granulated sugar until smooth. Add the eggs and vanilla extract, whisking until fully incorporated.
  3. In a separate bowl, stir together the flour, baking powder, and salt. Gradually fold the dry mixture into the wet ingredients using a spatula. Stop mixing as soon as you don’t see dry streaks.
  4. Pour the batter into the lined baking pan, smoothing out the top with a spatula.
  5. In a small bowl, combine 2 tablespoons of granulated sugar with 1 teaspoon of ground cinnamon. Sprinkle the mixture evenly over the batter.
  6. Bake for 25-30 minutes, or until the edges are golden and a toothpick inserted in the center comes out with just a few moist crumbs.
  7. Let the blondies cool in the pan for at least 20 minutes before lifting them out using the parchment paper. Slice into squares and serve.
