Cinnamon Scones

These easy homemade cinnamon scones are tender, buttery, and packed with warm cinnamon flavor. Ready in just 30 minutes, they’re perfect for breakfast, brunch, or a cozy snack with coffee.

  • 2 cups (250g) all-purpose flour
  • 1/3 cup (65g) granulated sugar
  • 2 tbsp (25g) brown sugar
  • 2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/2 tsp salt
  • 2 to 2 1/2 tsp ground cinnamon
  • 1/2 cup (113g) unsalted butter, cold and cubed
  • 1/2 cup (120ml) heavy cream, plus more for brushing
  • 1 large egg, room temperature
  • 1 1/2 tsp vanilla extract
  • Optional: 1/3 cup chopped nuts (pecans or walnuts)
  • Optional: Cinnamon-sugar topping (2 tbsp sugar + 1/2 tsp cinnamon)
  • Optional: Simple glaze (1/2 cup powdered sugar + 1-2 tbsp milk + dash of cinnamon)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large mixing bowl, whisk together flour, granulated sugar, brown sugar, baking powder, baking soda, salt, and ground cinnamon until well combined.
  3. Add cold, cubed butter. Use a pastry cutter or two forks to cut the butter into the flour mixture until it resembles coarse crumbs with some pea-sized pieces.
  4. In a small bowl, whisk together heavy cream, egg, and vanilla extract. Pour into the flour-butter mixture.
  5. Gently mix with a fork or spatula until the dough just comes together. If using nuts, fold them in now. If the dough seems dry, add a tablespoon more cream.
  6. Turn the dough onto a floured surface and gently pat into a 7-8 inch circle, about 3/4 inch thick. Cut into 8 wedges (or 12 for mini scones).
  7. Place wedges on the prepared baking sheet, spaced about 2 inches apart. Brush tops with extra cream and sprinkle with cinnamon-sugar topping if desired.
  8. Bake for 14-17 minutes, or until tops are golden and edges are set. Check at 13 minutes if your oven runs hot.
  9. Cool on the baking sheet for 5 minutes, then transfer to a wire rack. If desired, drizzle with glaze made from powdered sugar, milk, and cinnamon.

Notes

Keep ingredients cold for flaky scones. Do not overmix the dough—mix just until combined. For extra flavor, add nuts, diced apples, or orange zest. Scones can be frozen before or after baking. For gluten-free, use a 1:1 gluten-free flour blend. For dairy-free, use plant-based butter and coconut cream. Scones are best enjoyed warm and can be reheated in the oven or microwave.
