  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 2 shallots, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup whiskey (bourbon or Irish whiskey)
  • 1/2 cup chicken stock
  • 1 cup heavy cream
  • 1 teaspoon fresh thyme (optional)
  • 1/4 cup Parmesan cheese, grated

Instructions

  1. Pat the chicken dry with paper towels, then season both sides generously with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Add the chicken and cook for 4-5 minutes per side until golden brown. Remove from the skillet and set aside.
  3. Reduce the heat to medium. Add the butter to the skillet, followed by the shallots and garlic. Sauté for 2-3 minutes until fragrant and softened.
  4. Carefully pour in the whiskey and let it simmer for 1-2 minutes to cook off the alcohol. Scrape up any browned bits on the bottom of the skillet to incorporate them into the sauce.
  5. Add the chicken stock and let it reduce slightly, about 3-4 minutes.
  6. Lower the heat to medium-low and slowly add the heavy cream, whisking constantly to create a smooth sauce.
  7. Return the chicken to the skillet, spooning the sauce over it. Let it simmer for 10-12 minutes, or until the chicken is fully cooked (internal temperature of 165°F/74°C).
  8. Stir in the Parmesan cheese and fresh thyme. Taste and adjust seasoning with salt and pepper as needed.

Notes

If your sauce feels too thick, add a splash of chicken stock to thin it out. If it’s too thin, let it simmer uncovered for a few extra minutes to thicken. Use room-temperature chicken for even cooking and avoid overcrowding the skillet for proper searing.
