  • 1 pound boneless, skinless chicken breasts, thinly sliced or pounded flat
  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 ½ cups Italian seasoned breadcrumbs
  • ½ cup grated Parmesan cheese
  • Salt and pepper, to taste
  • Olive oil or vegetable oil, for frying
  • 12 slider buns or small soft rolls (Brioche buns recommended)
  • 2 cups marinara sauce
  • 2 cups shredded mozzarella cheese
  • ½ cup shredded provolone or fontina cheese (optional)
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon garlic powder
  • Fresh basil leaves or chopped parsley (optional garnish)

Instructions

  1. Slice chicken breasts into thin cutlets about ¼ inch thick; pound if needed for even thickness.
  2. Set up three shallow bowls: one with flour seasoned with salt and pepper, one with beaten eggs, and one with a mix of Italian breadcrumbs and grated Parmesan cheese.
  3. Dredge each chicken piece in flour, shake off excess, dip in eggs, then coat thoroughly with breadcrumb mixture, pressing gently.
  4. Heat about ¼ inch of oil in a large skillet over medium heat until shimmering. Fry chicken cutlets 3-4 minutes per side until golden and crispy. Drain on paper towels.
  5. Preheat oven to 375°F. Slice slider buns horizontally but keep top and bottom halves connected. Place bottom half in a baking dish.
  6. Spread a thin layer of marinara sauce over bottom buns. Arrange fried chicken evenly on top. Spoon more marinara over chicken, then sprinkle mozzarella and provolone cheese.
  7. Place top buns over cheese. Mix melted butter with garlic powder and brush over top buns.
  8. Cover baking dish with foil and bake for 15 minutes. Remove foil and bake an additional 5-7 minutes until cheese is bubbly and buns are toasted.
  9. Let sliders sit 5 minutes before slicing. Garnish with fresh basil or parsley if desired.

Notes

Use thin chicken cutlets for even cooking and tenderness. Keep oil hot but not smoking to avoid greasy breading. Brush buns with garlic butter before baking to prevent sogginess and add flavor. Marinara sauce can be simmered to thicken if watery. Breaded chicken can be prepared ahead and refrigerated or frozen before frying. For a lighter option, bake breaded chicken at 425°F for 20 minutes, flipping halfway.
