  • 1 lb Italian sausage (sweet or mild)
  • 1 cup low-carb or sugar-free pizza sauce
  • 1 cup pepperoni slices
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 cup chopped bell peppers (optional)
  • 1 cup sliced mushrooms (optional)
  • 1/2 cup chopped onions (optional)
  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat a large skillet over medium heat. Add 1 tablespoon of olive oil, followed by the ground beef and Italian sausage. Break the meat into small crumbles using a wooden spoon, and cook until browned, about 7-9 minutes. Season with salt and pepper.
  3. If using veggies, add them to the skillet after the meat is cooked. Sauté bell peppers, mushrooms, and onions for 3-5 minutes until softened.
  4. Stir in your low-carb pizza sauce and Italian seasoning. Let it simmer for 3-4 minutes so the flavors meld together.
  5. In a greased 9×13-inch baking dish, spread half of the meat mixture as the base layer. Sprinkle a generous amount of mozzarella cheese on top, followed by half of your pepperoni slices. Repeat the layers with the remaining meat, cheese, and pepperoni.
  6. Top the casserole with a mix of mozzarella and Parmesan cheese for that signature cheesy finish.
  7. Place the casserole in the preheated oven. Bake uncovered for 20-25 minutes or until the cheese is melted and bubbling.
