A hearty and flavorful one-pot dish packed with Cajun spices, smoky sausage, and creamy beans, perfect for comfort food or meal prep.

  • 1 pound (450g) dried red beans
  • 12 ounces (340g) andouille sausage, sliced
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 2 celery stalks, chopped
  • 4 garlic cloves, minced
  • 2 teaspoons Cajun seasoning
  • 2 bay leaves
  • Salt and pepper, to taste
  • 4 cups (1 liter) chicken broth
  • 2 cups (400g) cooked white rice
  • Green onions, chopped (for garnish)

Instructions

  1. Rinse and soak the beans: Place dried red beans in a bowl, cover with water, and soak overnight. Drain and rinse before cooking.
  2. Sauté the sausage: Heat a large pot or Dutch oven over medium heat. Add 2 tablespoons of oil and sauté sliced andouille sausage until browned. Remove and set aside.
  3. Sauté the vegetables: In the same pot, add chopped onion, bell pepper, and celery. Cook for 5 minutes, stirring occasionally, until softened. Add minced garlic and cook for 1 minute.
  4. Add the beans and seasoning: Stir in the soaked beans, Cajun seasoning, bay leaves, and a pinch of salt and pepper.
  5. Simmer: Pour in chicken broth and bring to a boil. Reduce the heat to low, cover, and let simmer for 1.5–2 hours, stirring occasionally, until the beans are tender.
  6. Add the sausage: Once the beans are cooked, stir the sausage back into the pot and simmer for another 10 minutes.
  7. Cook the rice: Prepare white rice according to package instructions.
  8. Serve: Spoon the red beans over the cooked rice and garnish with chopped green onions.

Notes

For a vegetarian version, skip the sausage and use vegetable broth. Adjust the spice level by reducing cayenne or adding jalapeño. Leftovers taste even better the next day.
