Ingredients

Scale
  • 1 large head cauliflower, cut into bite-sized florets
  • 1 cup (120g) all-purpose flour (or gluten-free flour blend)
  • 1 cup (240ml) water
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup (120ml) buffalo hot sauce (e.g., Frank’s RedHot)
  • 3 tbsp (45g) unsalted butter, melted (or vegan margarine/olive oil for dairy-free)
  • Olive oil or cooking spray for greasing the baking sheet
  • Optional: Ranch or blue cheese dressing for serving

Instructions

  1. Preheat your oven to 450°F (230°C). Line a rimmed baking sheet with parchment paper or a silicone baking mat and lightly grease with olive oil or cooking spray.
  2. Cut 1 large head of cauliflower into bite-sized florets, keeping them similar in size for even cooking.
  3. In a mixing bowl, whisk together 1 cup all-purpose flour, 1 cup water, 1 tsp garlic powder, 1 tsp paprika, 1/2 tsp salt, and 1/4 tsp black pepper until smooth and free of lumps. The batter should be thick but pourable.
  4. Dip each cauliflower floret into the batter, letting excess drip off, then place on the prepared baking sheet in a single layer without touching.
  5. Bake for 20 minutes, flipping each floret halfway through to ensure even browning and crispiness.
  6. While baking, melt 3 tbsp unsalted butter and combine with 1/2 cup buffalo hot sauce in a bowl, stirring until well blended.
  7. Remove cauliflower from oven and gently toss florets in the buffalo sauce mixture until fully coated.
  8. Spread the sauced cauliflower back onto the baking sheet in a single layer and bake for an additional 15 minutes, flipping halfway through.
  9. Check for doneness; bites should be crispy outside and tender inside with a vibrant buffalo glaze. Optionally broil for 1-2 minutes for extra crispiness, watching carefully to avoid burning.
  10. Serve immediately warm with ranch or blue cheese dressing.

Notes

Do not overcrowd the baking sheet to ensure crispiness. Flip florets gently but thoroughly halfway through both baking stages. For dairy-free, replace butter with vegan margarine or olive oil. For gluten-free, use a gluten-free flour blend or chickpea flour. Air drying cauliflower before battering helps batter stick better. Broil carefully if extra crispiness is desired.
