  • 3 medium ripe bananas (about 1 1/2 cups mashed)
  • 3/4 cup (150g) granulated sugar
  • 1/4 cup (50g) light brown sugar, packed
  • 2 large eggs, room temperature
  • 1 tsp vanilla extract
  • 1 3/4 cups (220g) all-purpose flour (or gluten-free flour blend for GF option)
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp ground cinnamon (optional)
  • 1/3 cup (80ml) pure maple syrup
  • 1/2 cup (60g) powdered sugar
  • 1 tbsp (14g) unsalted butter, melted
  • 1/4 tsp vanilla extract

Instructions

  1. Brown the butter: Place 1/2 cup unsalted butter in a medium saucepan over medium heat. Stir constantly as it melts, foams, and turns golden brown with a nutty aroma (about 5-7 minutes). Remove from heat and let cool slightly.
  2. Preheat oven to 350°F (175°C). Grease a 9×5 inch loaf pan and line with parchment paper.
  3. Mash bananas in a mixing bowl until smooth but slightly chunky (about 1 1/2 cups).
  4. Add browned butter (warm, not hot), granulated sugar, light brown sugar, eggs, and vanilla extract to the mashed bananas. Stir gently until combined.
  5. In another bowl, whisk together flour, baking soda, salt, and cinnamon (if using).
  6. Gradually fold dry ingredients into wet ingredients with a spatula until just combined. Do not overmix.
  7. Pour batter into prepared loaf pan and smooth the top.
  8. Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean or with a few moist crumbs. Start checking at 50 minutes.
  9. Cool bread in pan for 15 minutes, then transfer to a cooling rack.
  10. Prepare maple glaze by whisking together maple syrup, powdered sugar, melted butter, and vanilla extract until smooth.
  11. When bread is completely cool, drizzle or brush maple glaze over the top. Let set for 10-15 minutes before slicing.

Notes

Watch the butter carefully when browning to avoid burning. Fold dry ingredients gently to keep bread tender. Glaze only when bread is completely cool to prevent melting. Rotate pan halfway through baking for even browning. For gluten-free, use a 1:1 gluten-free flour blend. For dairy-free, substitute browned butter with browned coconut oil and use coconut cream in glaze.
