Instructions

  1. Line a baking sheet with parchment paper or a silicone mat and set it aside.
  2. In a heavy-bottomed saucepan, combine the butter, sugar, and salt over medium heat. Stir frequently until the butter melts and the sugar dissolves. Attach a candy thermometer if using.
  3. Bring the mixture to a boil, stirring occasionally. Continue cooking until it reaches 300°F (149°C), or the ‘hard crack’ stage. If you’re not using a thermometer, watch for the mixture to turn a deep golden brown.
  4. Remove the saucepan from heat and quickly stir in the vanilla extract. Be careful—it may bubble up slightly!
  5. Pour the hot toffee onto the prepared baking sheet, spreading it out evenly with a spatula. Work quickly as it will begin to harden.
  6. Sprinkle the chocolate chips over the hot toffee. Let them sit for a minute to melt, then spread the chocolate into an even layer.
  7. Optional: Sprinkle chopped nuts or sea salt over the chocolate layer for added texture and flavor.
  8. Let the toffee cool completely at room temperature until it hardens. You can speed this up by placing the baking sheet in the refrigerator.
  9. Once the toffee is set, break it into pieces and enjoy!
