  • 1 cup (200g) granulated sugar
  • 3 large eggs, room temperature
  • ½ cup (120ml) sour cream
  • ½ cup (120ml) heavy cream
  • ⅔ cup (55g) hot chocolate mix (good-quality brand like Ghirardelli)
  • 1 teaspoon vanilla extract
  • ½ teaspoon salt
  • Optional: ¼ teaspoon cinnamon or a pinch of cayenne for warming kick
  • Optional toppings: whipped cream, mini marshmallows or chocolate shavings, cocoa powder for dusting

Instructions

  1. Preheat oven to 325°F (163°C). In a medium bowl, combine chocolate cookie crumbs, melted butter, and sugar. Stir until mixture resembles wet sand.
  2. Press crust mixture firmly into the bottom of a 9-inch springform pan, smoothing with the bottom of a glass or measuring cup.
  3. Bake crust for 10 minutes. Let cool slightly while preparing filling.
  4. In a large bowl, beat softened cream cheese on medium speed until creamy and lump-free (2–3 minutes). Gradually add sugar and beat until smooth.
  5. Add eggs one at a time, mixing well after each addition to keep batter light.
  6. Add sour cream, heavy cream, hot chocolate mix, vanilla extract, salt, and optional spices. Mix on low speed until just combined; avoid overbeating.
  7. Pour filling over baked crust and smooth the top with a spatula.
  8. Place springform pan on a baking sheet and bake at 325°F (163°C) for 55–65 minutes until center is slightly jiggly but not liquid.
  9. Turn off oven and leave cheesecake inside with door slightly open for 1 hour to cool gradually.
  10. Remove from oven, cool to room temperature, then refrigerate for at least 6 hours or overnight.
