  • 1 fully cooked bone-in ham (810 pounds / 3.64.5 kg), spiral-cut recommended
  • ½ cup (120 ml) honey, preferably raw or wildflower
  • ½ cup (100 g) packed dark brown sugar
  • 2 tablespoons (30 ml) Dijon mustard
  • 1 can (about 20 ounces / 567 g) pineapple slices, drained
  • 2030 whole cloves
  • ½ cup (120 ml) pineapple juice from the canned pineapple
  • ½ teaspoon (1 g) ground cinnamon (optional)
  • Freshly ground black pepper, to taste

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. Score the ham by cutting shallow diamond shapes about ½ inch (1.3 cm) deep all over the surface.
  3. Stud the ham with whole cloves at the diamond intersections.
  4. Place the ham on a rack in a roasting pan, fat side up. Pour ½ cup (120 ml) pineapple juice into the bottom of the pan.
  5. In a small bowl, whisk together honey, brown sugar, Dijon mustard, and ground cinnamon if using.
  6. Brush the ham generously with about half of the glaze, covering all scored areas.
  7. Arrange pineapple slices on top of the ham, securing with toothpicks if needed.
  8. Cover loosely with foil and roast for about 1 hour 30 minutes (approximately 15 minutes per pound).
  9. Every 20 minutes, baste the ham with pan juices and remaining glaze. Remove foil during the last 30 minutes to let the glaze caramelize.
  10. Check the internal temperature with a meat thermometer; it should reach 140°F (60°C). Continue roasting and basting if needed.
  11. Remove the ham from the oven and let it rest, tented with foil, for 15-20 minutes.
  12. Slice the ham between the scored lines and serve with caramelized glaze and pineapple rings.

Notes

Score the ham to allow glaze penetration. Baste every 20 minutes to keep glaze fresh and sticky. Tent with foil to prevent over-browning. Let ham rest before slicing to lock in juices. Use a meat thermometer to avoid overcooking.
