  • ⅔ cup (160ml) milk of your choice (whole milk, oat milk, or almond milk)
  • ¼ cup (60g) plain Greek yogurt
  • 1 medium ripe banana, mashed
  • 2 tablespoons (32g) creamy peanut butter
  • 1 scoop (about 30g) vanilla protein powder (optional)
  • 1 tablespoon (15g) chia seeds
  • 1 tablespoon (15ml) pure maple syrup or honey (optional)
  • ½ teaspoon vanilla extract
  • Pinch of sea salt
  • For toppings: sliced banana, drizzle of peanut butter, chopped peanuts or almonds, dark chocolate chips or shavings, cinnamon or cocoa nibs

Instructions

  1. Mash the banana: Peel your ripe banana and drop it into your jar or bowl. Use a fork to mash it thoroughly until mostly smooth with a few tiny lumps remaining.
  2. Add the wet ingredients: To the mashed banana, add the milk, Greek yogurt, peanut butter, and vanilla extract (if using). If your peanut butter is thick, warm it for 10 seconds in the microwave first. Stir everything together until the peanut butter is fully incorporated.
  3. Add the dry ingredients: Pour in the rolled oats, chia seeds, protein powder (if using), and a tiny pinch of sea salt. If adding maple syrup or honey, add it now. Stir until all oats are coated and there are no dry pockets of protein powder.
  4. Taste and adjust: Taste the mixture and adjust sweetness or peanut butter flavor to your liking.
  5. Seal and refrigerate: Put the lid on your jar tightly and refrigerate for at least 6 hours, but ideally 8-12 hours overnight.
  6. Serve and top: In the morning, give the oats a good stir. If too thick, stir in a splash of milk. Add your desired toppings and enjoy cold or let sit at room temperature for 10 minutes.

Notes

Use a very ripe banana for natural sweetness and creaminess. If using protein powder, mix with a splash of warm water first to prevent clumps. Do not over-soak beyond 48 hours. For warm oats, microwave for 30-45 seconds before adding toppings. The flavors develop and improve after the first day.
