A rich, creamy beer cheese dip made with sharp cheddar, cream cheese, and pale ale, perfect for serving warm with soft pretzels. This easy and crowd-pleasing snack is ideal for game days and casual gatherings.

  • 2 cups (200g) sharp cheddar cheese, shredded
  • 4 oz (115g) cream cheese, softened
  • 1/2 cup (120ml) pale ale or lager beer
  • 1/2 tsp garlic powder
  • 1 tsp Dijon mustard
  • 1 tsp Worcestershire sauce
  • 1/2 tsp smoked paprika
  • Black pepper, freshly ground, to taste
  • Salt, optional, to taste
  • Soft pretzels (store-bought or homemade), warm

Instructions

  1. Shred 2 cups (200g) of sharp cheddar cheese and soften 4 oz (115g) of cream cheese by letting it sit at room temperature for about 15 minutes.
  2. Pour 1/2 cup (120ml) of pale ale or lager into a medium saucepan over medium-low heat. Warm gently until hot but not boiling, about 2-3 minutes.
  3. Stir in the softened cream cheese with a whisk until fully melted and smooth, about 2 minutes.
  4. Gradually add shredded sharp cheddar, about 1/2 cup (50g) at a time, whisking constantly until all cheese is melted and the mixture is creamy, about 5-7 minutes.
  5. Stir in 1/2 tsp garlic powder, 1 tsp Dijon mustard, 1 tsp Worcestershire sauce, 1/2 tsp smoked paprika, and freshly ground black pepper to taste. Adjust salt if needed.
  6. Reduce heat to very low and let the dip gently thicken for 3-5 minutes, stirring occasionally to keep smooth and prevent sticking.
  7. Transfer to a heat-safe serving bowl and serve immediately with warm soft pretzels. Keep warm in a slow cooker or fondue pot if desired.

Notes

Use room temperature cream cheese for smooth melting. Avoid boiling the beer to preserve flavor. If dip is too thick, whisk in a splash of beer or milk; if too thin, add more shredded cheese off heat. Freshly shredded cheese melts better than pre-shredded. Keep heat low and stir often to prevent graininess.
