  • 4 beef tenderloin steaks (68 oz / 170225 g each, trimmed and patted dry)
  • 1/2 cup (115 g) unsalted butter, softened
  • 3 oz (85 g) blue cheese, crumbled (Roquefort or Gorgonzola recommended)
  • 2 tbsp fresh parsley, finely chopped
  • 1 clove garlic, minced
  • Salt and freshly ground black pepper, to taste
  • 2 tbsp olive oil
  • Optional: 1 tsp lemon zest
  • Optional: 1 tsp fresh thyme, chopped

Instructions

  1. Prep the blue cheese butter: In a medium bowl, combine softened unsalted butter, crumbled blue cheese, minced garlic, chopped parsley, and optional lemon zest and thyme. Mix until smooth but slightly chunky. Roll into a log with plastic wrap and refrigerate.
  2. Season the beef tenderloin: Pat steaks dry, season generously with salt and pepper, and let sit at room temperature for 10 minutes.
  3. Preheat pan and sear steaks: Heat olive oil in a heavy skillet or cast-iron pan over medium-high heat until shimmering. Sear steaks 3-4 minutes per side for medium-rare (130°F / 54°C internal temperature). Avoid moving steaks during searing.
  4. Rest the steaks: Transfer steaks to a plate, tent loosely with foil, and rest for 5-7 minutes to redistribute juices.
  5. Serve: Slice chilled blue cheese butter into rounds and place one on each steak just before serving to melt over the warm meat.

Notes

Bring steaks to room temperature before cooking for even doneness. Pat steaks dry to ensure a good sear. Use a meat thermometer to avoid overcooking. Rest steaks after searing to keep them juicy. Slice blue cheese butter cold for slow melting. For extra melty butter, warm steaks briefly in a 275°F oven after adding butter.
