  • 1.5 pounds boneless, skinless chicken breasts or thighs
  • Salt and pepper to season
  • 2 tablespoons vegetable or canola oil
  • ½ cup (120ml) full-fat mayonnaise
  • 3 tablespoons sriracha sauce
  • 2 tablespoons honey
  • 1 tablespoon rice vinegar
  • 1 teaspoon garlic powder
  • 2 stalks green onions, thinly sliced
  • 1 tablespoon toasted sesame seeds (optional)

Instructions

  1. Pat the chicken dry with paper towels and season both sides generously with salt and pepper.
  2. Heat 2 tablespoons of oil in a skillet over medium-high heat until shimmering.
  3. Add the chicken and cook undisturbed for 5-6 minutes on the first side until nicely seared.
  4. Flip the chicken and cook for another 5-6 minutes until cooked through (internal temperature 165°F or 74°C).
  5. Transfer the chicken to a cutting board and let rest for 5 minutes, then slice into bite-sized strips or cubes.
  6. In a mixing bowl, whisk together mayonnaise, sriracha, honey, rice vinegar, and garlic powder until smooth.
  7. Add the sliced chicken back to the skillet or a large bowl and toss gently with the bang bang sauce until evenly coated.
  8. Garnish with sliced green onions and toasted sesame seeds before serving.

Notes

If sauce is too thick, stir in a teaspoon of water or lime juice to loosen. Use boneless skinless thighs for juicier chicken or pound breasts thin for even cooking. Cook chicken in batches to avoid overcrowding the pan. Adjust sriracha to control heat level.
