Bang Bang Chicken Bites are crispy, juicy chicken pieces coated in a crunchy panko crust and tossed with a creamy, sweet, and spicy Bang Bang sauce. This easy, crowd-pleasing appetizer is perfect for parties, game days, or family nights and can be baked or air fried for a healthier twist.

  • 1 1/2 lbs boneless, skinless chicken breasts or thighs, cut into 1-inch pieces
  • 1 cup all-purpose flour (use gluten-free blend if needed)
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika (or regular paprika)
  • 2 large eggs, beaten
  • 1 1/2 cups panko breadcrumbs (regular or gluten-free)
  • Cooking spray or oil (for baking or air frying)
  • 1/2 cup mayonnaise (Kewpie or Duke’s preferred, or vegan mayo)
  • 1/4 cup sweet chili sauce
  • 2 tablespoons sriracha or hot sauce (adjust to taste)
  • 1 tablespoon honey or maple syrup (optional, for sweetness)
  • 1 teaspoon rice vinegar or lemon juice
  • Chopped fresh chives or green onions (optional, for garnish)
  • Extra Bang Bang sauce for dipping

Instructions

  1. Cut chicken into 1-inch cubes and pat dry with paper towels.
  2. Set up three bowls: one with flour, salt, pepper, garlic powder, and smoked paprika; one with beaten eggs; and one with panko breadcrumbs.
  3. Toss chicken pieces in seasoned flour, shake off excess, dip into eggs, then coat thoroughly in panko. Press gently to adhere.
  4. Arrange coated chicken bites on a parchment-lined baking sheet or in an air fryer basket, leaving space between each piece.
  5. Lightly spray tops with cooking spray or brush with oil.
  6. Bake at 425°F for 18-22 minutes, flipping halfway, until golden and cooked through (internal temp 165°F), or air fry at 400°F for 10-12 minutes, shaking or turning halfway.
  7. While chicken cooks, whisk together mayonnaise, sweet chili sauce, sriracha, honey, and rice vinegar or lemon juice to make the Bang Bang sauce. Adjust to taste.
  8. Let cooked chicken bites cool for 2-3 minutes. Toss with half the Bang Bang sauce or drizzle over the top. Serve the rest of the sauce on the side.
  9. Garnish with chopped chives or green onions and serve immediately.

Notes

For extra crunch, double dredge the chicken by dipping in flour, then egg, then flour again, then panko. Pat chicken dry before coating for best crispiness. Adjust the sauce heat by varying the amount of sriracha. To make gluten-free, use gluten-free flour and panko. For a lighter sauce, substitute Greek yogurt for some or all of the mayo. Chicken can be prepped ahead and refrigerated before baking. Reheat leftovers in an oven or air fryer for best texture.
