  • 1/2 cup buttermilk (or milk with a squeeze of lemon)
  • 3/4 cup all-purpose flour (use gluten-free blend if needed)
  • 1/4 cup cornstarch
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1 large egg
  • Oil for frying (avocado or canola) or cooking spray for baking
  • 1/2 cup mayonnaise (regular, light, or vegan)
  • 1/4 cup sweet chili sauce
  • 2 tablespoons sriracha (adjust to taste)
  • 1 tablespoon honey (or maple syrup)
  • 1 teaspoon rice vinegar
  • 1/4 teaspoon garlic powder
  • Pinch of salt
  • Green onions, thinly sliced (optional garnish)
  • Sesame seeds, toasted (optional garnish)
  • Lime wedges (optional garnish)

Instructions

  1. Cut chicken breast into 1-inch bite-sized pieces.
  2. In a large bowl, toss chicken with buttermilk and a pinch of salt. Marinate for at least 10 minutes (up to 30 minutes for extra juiciness).
  3. In a shallow bowl, whisk together flour, cornstarch, baking powder, salt, black pepper, and garlic powder.
  4. In a separate bowl, beat the egg.
  5. Remove chicken from buttermilk, letting excess drip off. Dip each piece in egg, then dredge in flour mixture, pressing to coat all sides. Set aside on a plate or tray.
  6. To fry: Heat 1/2 inch oil in a large skillet to 350°F. Fry chicken bites in batches for 3-4 minutes per side, until golden brown and cooked through. Drain on paper towels.
  7. To bake: Preheat oven to 425°F. Arrange breaded chicken on a rack over a baking sheet. Spray with cooking spray. Bake 18-22 minutes, flipping halfway, until crispy and cooked through.
  8. For the sauce: In a bowl, whisk together mayonnaise, sweet chili sauce, sriracha, honey, rice vinegar, garlic powder, and a pinch of salt until smooth. Adjust seasoning to taste.
  9. While chicken is hot, toss with about 2/3 of the Bang Bang sauce. Reserve the rest for dipping.
  10. Garnish with green onions, sesame seeds, and lime wedges if desired. Serve immediately.

Notes

For extra crunch, double-dip chicken in egg and flour mixture. Marinate chicken for at least 10 minutes for juiciness. Adjust sriracha for desired heat. Use gluten-free flour for a gluten-free version. Air fryer method: cook breaded chicken at 400°F for 10-12 minutes, shaking halfway.
