A bubbling, golden casserole packed with tender cauliflower and smothered in creamy cheddar cheese sauce. Perfect for busy weeknights or cozy weekends, this low-carb comfort food is easy to make and kid-approved.

Ingredients

Scale
  • 1 large head of cauliflower, chopped into bite-sized florets (about 6 cups)
  • 2 cups shredded sharp cheddar cheese
  • 2 tablespoons unsalted butter, melted
  • 1 cup heavy cream
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • Panko breadcrumbs (optional, for topping)

Instructions

  1. Preheat the oven to 375°F (190°C) and grease a 9×13-inch baking dish with melted butter or cooking spray.
  2. Wash and dry the cauliflower, then chop it into small, bite-sized florets.
  3. In a large mixing bowl, whisk together melted butter, heavy cream, garlic powder, paprika, salt, and pepper. Gradually add shredded cheddar cheese, whisking until smooth.
  4. Add the cauliflower florets to the bowl and toss until every piece is coated with the cheese sauce.
  5. Transfer the cauliflower mixture to the greased baking dish. Spread it out evenly and sprinkle panko breadcrumbs on top if desired.
  6. Bake for 25-30 minutes, or until the top is golden and bubbly. For extra crispiness, broil for 2-3 minutes at the end.
  7. Let the casserole sit for 5 minutes before serving to allow the flavors to settle.

Notes

For a crunchier texture, reduce baking time by 5 minutes. Shred your own cheese for better melting. Customize toppings with bacon bits, green onions, or crushed potato chips.
