An easy and impressive party appetizer combining sweet Medjool dates, tangy creamy goat cheese, and crispy thick-cut bacon. Ready in about 25 minutes, perfect for last-minute entertaining.

  • 20 large Medjool dates
  • 4 oz (115g) creamy goat cheese
  • 10 slices thick-cut bacon, cut in half
  • Toothpicks
  • Optional: chopped fresh parsley for garnish
  • Optional: honey for drizzling

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Using a sharp knife, make a lengthwise slit in each date and carefully remove the pit, keeping the date intact.
  3. Spoon about a teaspoon of creamy goat cheese into each pitted date.
  4. Cut each bacon slice in half. Wrap one half slice around each stuffed date and secure with a toothpick.
  5. Arrange the bacon-wrapped dates on a parchment-lined baking sheet or wire rack.
  6. Bake for 12 to 15 minutes, turning halfway through, until bacon is crispy and golden.
  7. Let the dates cool for a couple of minutes before serving. Optionally, sprinkle with chopped parsley or drizzle honey.

Notes

Use thick-cut bacon for best results to avoid burning and ensure crispiness. Medjool dates are preferred for their size and texture. Do not overstuff dates with cheese to prevent spilling and burning. Using a wire rack helps bacon crisp evenly. Can be prepped ahead and baked just before serving. For dairy-free, substitute goat cheese with dairy-free cream cheese. For a lighter version, use turkey bacon.
